We love making blueberry pancakes from scratch – I always find they taste much better than anything made from a packet to which you just add an egg and some oil. These pancakes are made with real ingredients, so this recipe is the perfect breakfast and is, in fact, healthier than a blueberry pancake recipe made with packet mix.

So, start with 1 cup of self-raising flour. Add a teaspoon of salt and mix them together. Using two bowls, separate your eggs. Whisk the egg yolks and the milk together, add a splash of vanilla essence, and pour it into the dry mix. Stir to combine, then pour in your tablespoon of melted butter. Stir vigorously to make sure there are no lumps, to create a silky smooth batter.

Now, this is where our recipe is a little different from most! Whisk your egg whites until they form soft peaks. Add your tablespoon of sugar and whisk again until the egg whites are firm and glossy. This is now meringue, and we will gently fold it into our pancake batter to make our pancakes light and fluffy with a soft center.

Grease a skillet or non-stick frying pan with a couple of spoonfuls of butter then, once hot, add a tablespoon of pancake batter. This recipe doesn’t require a ring to cook the pancakes; if poured carefully it will create perfect circles. Cook for 1 or 2 minutes, then gently slide your spatula underneath and flip the pancake over. The bottom should be firm and golden. Cook the other side for another minute, then put it on a plate. Pile up your pancakes to make a tall stack and top them with our delicious Århus Blueberry No Sugar Added Preserves.

INGREDIENTS:

1 CUP SELF-RISING FLOUR

1 TSP SALT

2 EGG YOLKS

1 CUP MILK

1 TSP VANILLA ESSENCE

1 TBSP BUTTER

1 TBSP SUGAR

ÅRHUS™ BLUEBERRY NO SUGAR ADDED PRESERVES

DIRECTIONS:

  1. Mix 1 cup of self-rising flour with 1 tsp of salt. 
  2. Beat 2 egg yolks with 1 cup of milk and add to the flour.
  3. Add 1 tbsp of melted butter whisk until mixture is soft.
  4. Beat whites until soft peaks form. Add 1 tbsp of sugar till you get sufficient hardness. Then add to the mixture.
  5. Spoon 2 or 3 tbsp of batter onto a buttered skillet and cook until the pancake’s surface has some bubbles (1 to 2 minutes).
  6. Flip carefully until browned on the underside.
  7. Top pancackes with Århus™ Blueberry No Sugar Added Preserves.
