Today, we are learning how to make cream cheese blueberry muffins from scratch using our Århus Blueberry No Sugar Added Preserves.

This easy mini blueberry muffins recipe is quick and fun to make – this is a recipe to get the kids involved as the muffins are miniature, perfect for smaller hands to pour the batter into the muffin cases. Plus, children will have a lot of fun dolloping the Århus Blueberry Preserves into the batter at the end and swirling those colors together!

By using our Blueberry No Sugar Added Preserves, not only is this a recipe for low-calorie blueberry muffins, but it’s ideal for when fresh blueberries are no longer in season. Just open your jar of Blueberry Preserves and add a spoonful to each muffin! Let’s get started!

First, preheat your oven to 375°F or 190°C. Mix the flour, sugar, and room temperature butter in a bowl until the mixture is crumbly – we find the easiest and quickest method is to use electric beaters for this. Now add half of the milk and beat everything together to ensure there are no buttery lumps. In a separate bowl, whisk the remaining milk with the egg and vanilla extract until well combined. Pour the liquid into the batter and beat with your electric mixer until smooth. And just like that, your muffin batter is done! We told you it was quick! Now, let’s have some fun with the Blueberry Preserves. Line up your mini paper muffin cases on a baking tray and add enough muffin batter to each one until they are three-quarters full. Add a teaspoon of Århus Blueberry No Sugar Added Preserves to each, then gently swirl the blueberries into the muffin batter using the spoon or a toothpick. Slide the tray into the oven and bake for 18 minutes. Remove the muffins from the oven when they are well-risen and golden and smelling sweet and delicious. Serve your mini blueberry muffins with an extra spoonful of Århus Blueberry No Sugar Added Preserves on top.

INGREDIENTS:

4 OZ SELF-RISING FLOUR 

5 OZ SUGAR

1.5 OZ BUTTER

4 US FL OZ MILK

1 EGG

1 TSP VANILLA EXTRACT

ÅRHUS™ BLUEBERRY NO SUGAR ADDED PRESERVES

8 MUFFIN TINS

DIRECTIONS:

  1. Preheat oven to 375° F. 
  2. Use an electric mixer for 4 oz self-rising flour, 5 oz sugar, 1.5 oz of room temperature butter.
  3. Add 2 us fl oz milk. Mix until well combined.
  4. Whisk with a fork 2 us fl oz milk, 1 egg, and 1 tsp vanilla extract. 
  5. Add to the batter and mix until well combined.
  6. Divide batter among muffin tins, adding 1 tbsp of Århus™ Blueberry No Sugar Added Preserves on each one. 
  7. Mix ÅRHUS™ Fruit Preserve with a toothpick.
  8. Bake at 375° for 18 minutes.
