Welcome to another episode of Cooking with Århus, where we provide you with cooking inspiration and unique recipes using our jams and preserves.

Today, we are sharing with you a no-bake cheesecake recipe which we will top with our Århus Mixed Berry No Sugar Added Preserves for a wonderfully fruity kick. Who doesn’t love cheesecake?

This easy no-bake cheesecake recipe is light, creamy, and fragrant with lemon, which complements the blackberries, blueberries and raspberries in the preserves. It is delicious and incredibly simple, ready to eat after just a couple of hours in the fridge.

Our recipe is a little different from others, making it, in our opinion, the best no-bake cheese recipe! Most no-bake cheesecakes are a mixture of cream, cream cheese, and sugar. Here, we also add fluffy whipped egg whites which makes the creamy texture so light and soft, almost melt-in-the-mouth. Of course, as this cheesecake contains raw egg white, make sure your eggs are pasteurized.

First, tip all the graham crackers into a food processor and blitz until they form fine crumbs. Pour in your melted butter and whiz the food processor again until all the crumbs come together. Scoop everything out into your circular baking pan. Make sure you choose a non-stick springform pan or one with a loose bottom. There is no need to grease it first. Flatten all the crumbs so you have a sturdy base. Put the pan in the freezer for 10 minutes to set. Beat together your cream cheese, half the sugar, and the lemon zest until soft and fluffy.

Meanwhile, put the gelatin and half the lemon juice in a microwavable bowl, and warm it for 10 seconds in the microwave so the gelatin dissolves. Add the remaining lemon juice, then beat it into your cream cheese mixture. Whisk the egg whites until they are thick, then add the remaining sugar and continue whisking until they form soft peaks. Gently fold them into the cream cheese mixture. In a separate bowl, beat the cream until thick, then fold it into the cheesecake filling. Finally, pour all the mixture out onto the graham cracker base and smooth the surface. Leave it to chill in the fridge for four hours, then gently release it from the pan and top with Århus Mixed Berry No Sugar Added Preserves.

INGREDIENTS:

10 OZ GRAHAM CRACKERS

8 TBSP MELTED BUTTER

7 OZ HEAVY CREAM

16 OZ CREAM CHEESE

4 TBSP LEMON JUICE (1 Medium Lemon)

LEMON ZEST

7 OZ SUGAR

2 EGG WHITE BEATEN TO SNOW

1 ENVELOPE UNFLAVORED GELATIN

ÅRHUS™ MIXED BERRY NO SUGAR ADDED PRESERVES

DIRECTIONS:

  1. Press firmly into the pan (no need to grease the pan first). Freeze for 10 minutes.
  2. Beat heavy cream until doubled in size. Set aside.
  3. Use an electric mixer to mix cream cheese, 3.5 oz sugar, and lemon zest.
  4. Dissolve unflavored gelatin with 2 tbsp lemon juice in the microwave for 10 seconds. Add rest of lemon juice (2 tbsp). Add to the mix.
  5. Beat whites to snow, add 3.5 oz sugar until it forms stiff peaks add to the cheese.
  6. Use a rubber spatula to mix everything and add the cream.
  7. Pour the mix on top of the crust using a rubber spatula or spoon.
  8. Chill in the refrigerator for at least 4 hours.
  9. Top with Århus™ Mixed Berry No Sugar Added Preserves.
